Make Chipotle Smashed Potatoes

Made with baby Yukon gold potatoes and two types of chile peppers, chipotle smashed potatoes goes great with any protein. Recipe serves 2.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 5 baby Yukon gold potatoes
  • 4 slices of thick-cut bacon, chopped
  • 1 leek, sliced
  • 2 tbsp. Chipotle chile pepper
  • 2 tbsp. Ancho chile pepper
  • 1 tbsp. butter
  • salt & pepper
  • 1/8 cup milk

    Bacon & Leeks

  1. Step 1

    Heat a skillet over medium heat.

  2. Step 2
     

    Add chopped bacon and sliced leeks to the skillet.

  3. Step 3

    Cook bacon and leeks about 8 minutes, or until tender.

  4. Step 4

    Remove bacon and leeks from heat, set aside.

  5. Potatoes

  6. Step 1
     

    Bring 6 cups of water to a boil. Toss in 1 tsp. of salt to season the potatoes.

  7. Step 2
     

    Place potatoes into boiling water and cook for about 15 minutes. Stab potato with fork to determine softness.

  8. Step 3
     

    Drain water from potatoes and begin smashing with 1 tbsp. of butter and milk.

  9. Step 4
     

    Smash bacon and onion into potatoes, and slowly add chile peppers and salt & pepper as needed.

Tips & Warnings
  • Leave skin on potatoes, they're tasty!
  • For a spicier dish, chop fresh chipotle chiles.
  • Experiment with different types of potatoes.
  • Decrease measurements of chile peppers if you have a sensitivty to spicy foods because these potatoes are spicy!
