How to Make Sweet and Sour Rabbit Stew

Things You'll Need
- 2 1/2 lbs. rabbit
- Flour
- Salt
- Pepper
- 2 tbsp. vegetable oil
- 1 cup pineapple juice
- 1/4 cup vinegar
- 1/2 tsp. salt
- 1 cup pineapple pieces
- 1 medium green pepper, sliced
- 1 1/2 tbsp. cornstarch
- 1/4 cup sugar
- 1/2 cup water
- Cooked rice

Cut rabbit into serving-sized pieces. Dredge each piece in flour that has been seasoned with salt and pepper.

Heat the oil in a heavy skillet over medium heat. Add the rabbit pieces to the pan and brown them on all sides.

Stir in the pineapple juice, vinegar and salt. Cover the pan and cook the rabbit over low heat for 45 minutes or until the meat is tender.

Add the pineapple and green pepper to the pan. Cook the stew a few minutes longer, until it starts to soften up a bit.

Mix the cornstarch with the sugar, then gradually stir in the water a little bit at a time. Stir this mixture into the liquid in the pan and cook over low heat for five more minutes or until the sauce has thickened. Serve over cooked rice, if desired.
