How to make Pumpkin Chocolate Chip Woopie Pies

Woopie Pies of all types are out there. Everything from Chocolate, Peanut Butter, changing the frosting here and there. This recipe I modified from Pumpkin Chocolate Chip Cookies provided to me. I took the ingredients that made the cookies and added my typical frosting for these types of foods and come out with the Pumpkin Chocolate Chip Woopie Pie

Instructions

Things You'll Need:

  • Time
  • Mixer
  • 2 Mixing Bowls
  • Oven
  • 2 Eggs
  • 1 15oz can of pumpkin
  • 1 Cup of oil
  • 2 Cups of Sugar
  • 4 Cups of Flour
  • 2 Teaspoons of Cinnamon
  • 2 Teaspoons of Baking Soda
  • 4 Teaspoons of Baking Powder
  • 2 Teaspoons of Salt
  • 2 Teaspoons of Milk
  • 2 Teaspoons of Vanilla
  • 1 Package of 12 oz. Mini Chocolate Chips
  • 3/4 Cup of Shortening
  • 2 Cups Confectionery Sugar
  • 2 Egg Whites
  • 1 Tablespoon of Vanilla
  • pinch of salt
  1. Step 1

    Mix together the Eggs, Pumpkin, Oil and Sugar.

    With the liquid mixture you have, add the remaining ingredients.

    Drop by teaspoon (or larger) this is what will make the size of your pies. Do keep in mind these will expand so you may at first need to experiment in order to get the right size you are looking for. I personally use a cookie dough scoop.

    Preheat oven to 375 degrees F. Bake for 10 Minutes (longer if you are making bigger cookies)

    With the remaining ingredients, you will need to make some filling.
    In a separate bowl mix together 3/4 Cups of Shortening, 2 Cups of Confectionery Sugar, 2 Egg Whites, and 1 Tablespoon of Vanilla and pinch of salt. Beat until fluffy.

    When the Cookies are done, allow them to cool (A Cooling rack or similar is preferred.) With the filling add just a small amount (in most cases with the average cookie or pie you should not need much more then a teaspoon)
    You are now ready to serve

Tips & Warnings
  • These can yield approximately 25 pies (this depends on how big you make these, therefore this number is not set in stone)
  • Extra Cinnamon will make your cookies darker.
  • Add filling when the cookies are cool.
  • Refrigerate any pies not being eaten. Most pies can last 1 week, if left out for too long they can go bad quicker and taste worse. Plus the chips can melt.
  • Mix with a mixer, the dough is fixed.
  • Be careful if you elect to double batch, and be careful not to mix for long periods of time. As the dough gets thick, some mixers loose speed and can result in a burnt out mixer.
