How to Make Oatmeal Cake

When you have leftover oatmeal, don't throw it away or give it to the dog. Make this delicious oatmeal cake! It's tasty and can be served frosted for a dessert or unfrosted as a coffee cake. This recipe makes a 9 x 13 inch cake.

Instructions

Things You'll Need:

  • 1 2/3 cup leftover cooked oatmeal
  • 3/4 stick real butter
  • 3/4 cup packed brown sugar
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 1/3 cup white flour
  • Dash of salt
  • 1/2 tsp. nutmeg
  • 1 tsp. cinnamon
  • 2 tsp. baking soda
  • 1/2 cup powdered sugar
  • 1/2 tsp. real vanilla
  • 3 tbsp. milk
  • 1/2 cup raisins (optional)
  • 1 cup chocolate chips (optional)
  • 9 x 13 inch pan
  • Spray on shortening
  • Electric mixer and bowl
  1. Step 1

    Preheat the oven to 350 degrees F. Spray the shortening into the cake pan and set it aside.

  2. Step 2

    Combine the cooled leftover cooked oatmeal in a large bowl with the butter, brown sugar, granulated sugar and eggs. Beat well with an electric mixer. This will be a thick wet lumpy batter when you are done.

  3. Step 3

    Measure the white flour. Add the salt, nutmeg, cinnamon and baking soda. Add that mixture to the batter one quarter cup at a time. Blend it with the electric mixer. Continue to add the dry ingredients until they are all incorporated into the cake batter.

  4. Step 4

    Fold in the optional raisins and chocolate chips if you like them.

  5. Step 5

    Spoon the batter into the greased cake pan and bake in the preheated 350 degree oven for 45 minutes. The cake is done when you can touch it in the center and it bounces back or when you insert a knife or toothpick into the cake and it comes out clean. Allow the cake to cool before adding any frosting or glaze.

  6. Step 6

    Mix the powdered sugar, milk, and vanilla to form a glaze that you can pour over the cake. It will soak into the cake leaving a sweet translucent coating on top. Cut into generous rectangular pieces and serve with coffee or for dessert.

Tips & Warnings
  • This cake is good with a cream cheese frosting or, if you added chocolate chips, a chocolate frosting.
  • Any kind of chopped nuts can be added to the cake with the raisins or chocolate chips.
  • If you have more leftover oatmeal you can adjust the ingredients mathematically to make several oatmeal cakes at the same time.
  • This cake freezes well.
