Things You'll Need:
- 2 Cans yellow hominy
- 1 Medium onion
- 1 Stick butter
- 1 Can cream of mushroom soup
- 1 Small jar pimento
- 1 Cup finely shredded mild cheddar cheese
- Large mixing bowl
- 2-Quart casserole dish
- 1 Non-stick skillet
- 1 Sharp knife

Step 1
Preheat oven to 325 degrees F.

Step 2
Peel and finely chop 1 medium onion.

Step 3
Saute onion in a non-stick skillet in a stick of butter until the onion becomes translucent.

Reserve the butter wrapper.

Step 5
Transfer onion cooked in butter to a large mixing bowl.

Add 2 can of drained yellow hominy, 1 can of cream of mushroom soup, 1 small jar of pimento and 1 cup of finely grated mild cheddar cheese to the mixing bowl containing the onion cooked in butter.

Stir contents of the bowl, mixing well.

Pour hominy casserole mixture from the mixing bowl into a greased 2-quart casserole dish. You may use the paper the butter was wrapped in to grease the casserole dish.

Bake hominy casserole for 25 to 30 minutes in a 325 degree oven.

Step 10
Serve hominy casserole hot as a side dish with any meat or poultry. Delicious!
