Instructions

Things You'll Need:

  • Several large fresh mushrooms
  • Whipped cream cheese
  • Garlic salt
  • Water chestnuts, very firmly chopped
  • Sliced black olives
  • Toothpicks
  • Red food coloring or ketchup
  • Fresh parsley for garnish
  1. Step 1

Preheat oven to 350 degrees. Wash the mushrooms under cool running water and remove the stems.

  2. Step 2

Put the mushrooms in a baking dish and cook them for a few minutes, just until they begin to turn tender. Set them aside and allow them to cool.

  3. Step 3

Place the cooled mushrooms on a piece of waxed paper with the rounded sides down and the stem holes facing up.

  4. Step 4

Mix the whipped cream cheese, garlic salt and chopped water chestnuts in a small bowl.

  5. Step 5

Fill the stem holes with the cream cheese mixture, using a spoon to form the cream cheese into round eyeball shapes.

  6. Step 6

Put an olive slice in the middle of each mushroom eyeball and paint a few creepy broken veins on each mushroom eyeball with a toothpick dipped in ketchup or red food coloring.

  7. Step 7

Arrange the mushroom eyeballs on a large serving platter with some fresh parsley garnish tucked underneath, and serve.
