How to Make Strawberry Yogurt Pancakes

Things You'll Need
- 1 1/2 cup flour
- 1/2 tsp. baking soda
- 1 tsp. baking powder
- 2 tbsp. sugar
- 1/2 tsp. salt
- 3 eggs
- 1 cup buttermilk
- 3 tbsp. melted butter
- 6 oz. strawberry yogurt
- 1/2 tsp. vanilla extract

Mix the flour, baking soda, baking powder, sugar and salt together in a large mixing bowl, stirring until it's thoroughly blended.

Beat the eggs, then stir in the buttermilk, melted butter, strawberry yogurt and vanilla extract.

Oil the griddle with butter, or spray it with non-stick cooking spray. Heat it over medium heat.

Pour a half cup of strawberry pancake batter onto the hot griddle. Cook eight minutes or until the top is bubbly. If you want smaller pancakes, use a quarter measuring cup.

Flip the strawberry yogurt pancake with a spatula, and cook the other side just until it's browned.

Serve the pancakes hot off the griddle with warm strawberry syrup or maple syrup.

To make strawberry yogurt pancakes even more delightful, top them with some fresh sliced strawberries, if they're in season. If you don't have fresh strawberries, thaw out a few frozen berries.
If you're on a low-sugar or low-fat diet, you can substitute low-fat yogurt, sugar-free syrup or low-fat milk.
If you want fluffier pancakes, use slightly less milk. If you like your pancakes on the dense side, use a little more milk.
