How to Make Patience Biscuits

This quick recipe for Patience Biscuits, in fact, requires very little in the way of patience. Baking powder is a leavening agent for baked goods. It's alkaline, and when mixed with something acidic, like buttermilk or sour milk, it forms carbon dioxide bubbles, which cause the dough to rise. While yeast breads need time to rise and double and rise again, baking powder biscuits can be whipped up and on the table in no time at all.

Things You'll Need:

  • 2 cups flour
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 cup lard
  • 3/4 cup buttermilk or sour milk
  • Egg yolk
  1. Step 1

    Preheat the oven to 450 degrees F. Find a biscuit cutter, a round cookie cutter or the top of a medium-sized glass to use to cut the biscuits.

  2. Step 2

    Sift the flour into a large bowl while adding the baking powder one tsp at a time. Add the salt to the dry ingredients.

  3. Step 3

    Add the lard to the dry ingredients, and work with a fork to produce fine crumbs. Purchase lard at the butcher shop or meat counter or substitute solid shortening.

  4. Step 4

    Measure the buttermilk or add a splash of vinegar to whole milk and let it curdle. Add the buttermilk or sour milk to the flour-lard mixture. Work the dough until it's smooth and can be worked into a ball.

  5. Step 5

    Sprinkle flour onto a work surface. Roll the dough out to about 1/2 inch thick. Cut into biscuit rounds and place on an ungreased baking sheet.

  6. Step 6

    Beat the egg yolk in a small bowl with a splash of milk. Brush a little of the mixture over the top of each biscuit before baking to hasten browning.

  7. Step 7

    Bake the biscuits for 10 to 12 minutes. Use the oven light to monitor the progress. Remove from the oven when golden brown.

  • Serve with fruit preserves, honey or butter for a special treat.
