Difficulty: Moderate
Instructions

Things You'll Need:

  • 2 cups cooked turkey breast, shredded
  • 1 apple, cored and thinly sliced
  • 1 pear, cored and thinly sliced
  • 1 celery stalk, chopped
  • 1/2 cup chopped walnuts
  • 1/2 cup dried cranberries or cherries
  • 1/4 cup buttermilk
  • 1/3 cup mayonnaise
  • 1 tbsp. freshly squeeze lemon juice
  • 2 oz. blue cheese, crumbled
  • 1 tbsp. tarragon
  • 1 tbsp. fresh parsley, finely minced
  • Salt
  • Freshly ground black pepper
  1. Step 1

Place the shredded turkey, chopped pears, chopped apple, chopped walnuts and dried cranberries in a large mixing bowl and stir gently until the mixture is thoroughly blended.

  2. Step 2

Make the salad dressing by whisking the mayonnaise, buttermilk, lemon juice, tarragon and parsley together in a separate small bowl. Add salt and freshly ground black pepper to taste.

  3. Step 3

Add the salad dressing to the turkey mixture. Toss it until the turkey and fruits are coated.

  4. Step 4

Chill the turkey Waldorf salad in the refrigerator and sprinkle the crumbled blue cheese on the salad just before serving.

Tips & Warnings
  • Vary the turkey Waldorf salad by adding almonds or pecans in place of walnuts.
  • Oregano, thyme or sage can be substituted for tarragon if you prefer.
  • Dried apricots can be used in place of dried cranberries or dried cherries, or you can use any combination.
