Difficulty: Moderate
Instructions

Things You'll Need:

  • 1 1/2 cup brown sugar, firmly packed
  • 1/2 tsp. baking soda
  • 1/2 cup white sugar
  • 2 1/2 cups cake flour
  • 1/2 tsp. salt
  • 1 cup butter
  • 2 large eggs
  • 2 tsp. pure vanilla extract
  1. Step 1

Preheat the oven to 375 degrees F.

  2. Step 2

Measure the flour, cinnamon, baking soda and salt very carefully and sift them together.

  3. Step 3

Place the softened butter and brown sugar in a large mixing bowl and add 1/2 cup of the white sugar. Blend the mixture with an electric mixer until it's creamy and add the eggs and the pure vanilla extract. Stir in the sifted dry ingredients and mix well.

  4. Step 4

Wrap the dough in plastic wrap and put it in the refrigerator to chill for an hour.

  5. Step 5

Use a teaspoon to shape the chilled cookie dough into small balls. Roll the balls in a mixture of white sugar and cinnamon and place them on an ungreased cookie sheet with about 2 inches between each cookie.

  6. Step 6

Bake the cookies for about 12 minutes, or until the bottoms of the cookies are brown.

  7. Step 7

Remove the cinnamon sugar cookies and allow them to cool on wire racks.

Tips & Warnings
  • Cinnamon sugar cookie dough can easily be made ahead. Simply roll out the dough and then roll it into a cigar shape. Chill the rolls and then cut them into 1/4 inches slices. Keep them in the freezer up to six weeks. When you're ready to bake the cookies, roll them in sugar and cinnamon and bake as directed.
