How to Make Chicken Curry With Spinach

Chicken curry with spinach is similar to a traditional Indian dish called Chicken Saag. It's a great one dish meal, combining protein and vegetables into one delicious dish. Serve spicy chicken curry and spinach with hot rice or buttered toast.

Instructions

Things You'll Need:

  • 3 lb. skinless chicken pieces, cut into bite sized chunks
  • 3 tbs. peanut oil
  • 2 garlic cloves, minced
  • 1 small onion, sliced
  • 1 cinnamon stick
  • 2 dried bay leaves
  • 4 whole cloves
  • 1/2 tsp. chili powder
  • 1 tsp. garam masala
  • 1 tsp. coriander
  • 1 tsp. cumin
  • 1 tsp. curry powder
  • 1 tsp. salt
  • 1/2 pt. heavy cream
  • 4 large tomatoes, coarsely chopped
  • 4 bunches of fresh spinach, washed and chopped
  1. Step 1

    Heat the peanut oil in a large skillet or a wok. Add the garlic, sliced onion, cloves, cinnamon stick and bay leaves, and fry until the onion and garlic are golden brown.

  2. Step 2

    Stir in the chopped tomatoes and cook the mixture for 5 more minutes. Add the chicken and the remaining spices, and cook until the chicken is done and the oil begins to separate, about 15 minutes.

  3. Step 3

    Mix in the chopped spinach and the cream, and add additional salt and pepper to taste, if needed.

  4. Step 4

    Cover the pan and cook the chicken curry with spinach for about 10 more minutes. If the mixture seems too thick, add a small amount of water.

  5. Step 5

    Serve the chicken curry with spinach on top of rich or toast.

Tips & Warnings
  • You can find garam masala at health food stores, or any supermarket that carries Indian foods.
