How to Make Chicken Curry With Spinach

Things You'll Need

  • 3 lb. skinless chicken pieces, cut into bite sized chunks
  • 3 tbs. peanut oil
  • 2 garlic cloves, minced
  • 1 small onion, sliced
  • 1 cinnamon stick
  • 2 dried bay leaves
  • 4 whole cloves
  • 1/2 tsp. chili powder
  • 1 tsp. garam masala
  • 1 tsp. coriander
  • 1 tsp. cumin
  • 1 tsp. curry powder
  • 1 tsp. salt
  • 1/2 pt. heavy cream
  • 4 large tomatoes, coarsely chopped
  • 4 bunches of fresh spinach, washed and chopped

      Heat the peanut oil in a large skillet or a wok. Add the garlic, sliced onion, cloves, cinnamon stick and bay leaves, and fry until the onion and garlic are golden brown.

      Stir in the chopped tomatoes and cook the mixture for 5 more minutes. Add the chicken and the remaining spices, and cook until the chicken is done and the oil begins to separate, about 15 minutes.

      Mix in the chopped spinach and the cream, and add additional salt and pepper to taste, if needed.

      Cover the pan and cook the chicken curry with spinach for about 10 more minutes. If the mixture seems too thick, add a small amount of water.

      Serve the chicken curry with spinach on top of rich or toast.
