How to Make Zucchini Fritters

Things You'll Need
- 3 or 4 zucchinis
- 1 small onion
- 1/4 cup Parmesan cheese, fresh
- 1 tablespoon Dijon mustard
- 3 eggs, cage-free
- 1/3 cup flour
- Olive oil
- 10-inch non-stick pan

Wash zucchini and grate until you have about 4 cups. Place in a strainer and salt to get rid of some of the water content.

Finely grate small onion.

In a medium bowl, beat the 3 eggs.

Stir in the Dijon mustard, flour and Parmesan cheese.

Fold in the zucchini and onion.

Preheat your 10-inch pan and add 1 tablespoon of olive oil. Heat.

Add the fritter mix. Spoon 1to 2 tablespoons of mix per fritter. Fry in small batches.

Add more oil as necessary as you work. Drain fritters on paper toweling before serving.

Serve with a picante or spaghetti sauce.
