How to make fishcakes using one piece of fish

Fishcakes are a tastey fried food that can be made for any occasion. They can be made from any kind of fish from the cheapest can of tuna to the highest priced salmon. The most famous kind of fishcake is made with crab or lobster. I have a method that will allow you to make them using only one piece of fish and serve many. This how-to will make believer out of you for sure.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 1 food processor or blender
  • 1 large piece of fillet fish (whiting or tilapia)
  • 6 slices of bread (soaked in milk)
  • 1 small onion (minced)
  • 1 medium green pepper (minced)
  • 1 dallop of mayonaise
  • 1 1/2 tsp of baking powder
  • 1 tsp old bay seasoning (optional)
  • salt/pepper to taste
Step1
Place all ingredients in the food processor or blender, blend well and set aside.
Step2
heat oil in the skillet on medium-high heat.
Step3
When oil is hot enough to fry, spoon in large spoonfuls of the fish mixture into the hot grease and allow to fry to a rich brown crisp then turn over to achieve the same on the other side.
Step4
when completely fried on both sides of cakes, lift cakes out of hot oil with a large draining spoon onto folded paper towels to drain. Done.

Tips & Warnings

  • The fish mixture blended in the food processor or blender will be of a thick grainy texture and when spooning it into the hot oil, spoon in to the size fishcake you desire.
  • When I make this I get about 7-8 large size fishcakes per batch.
  • This recipe gets better for you each time you make as you personalize it with your own touches.
  • I have even made this using leftover corn bread or a small loaf of mayonaise bread sometimes.
  • Many never know that I only use one piece of fish and they always come back for second helpings. Cooking them this way makes them light and flavorful, but filling.
  • Serve with soup and salad.
  • Once you start makinug these fishcakes, you will always be asked to make more
