Stuffed Tortillas with Buttered Corn and Cheese to make Awesome Quesadillas to Feed Any Crowd.

Instructions

Difficulty: Easy

Things You’ll Need:

  • 1 pkg. Corn Tortillas -
  • 12 Inch
  • 1-1/2 cups steamed or boiled tender corn
  • 2 cups grated cheddar cheese
  • Salt
  • Juice of 1 lemon
  • Pepper
  • Butter
Step1
1. Pre-Heat a frying pan or a griddle.
Step2
2. Add 1 teaspoon of olive oil or butter and spread over the surface.
Step3
3. Place one of the corn flour tortilla over the oil.
Step4
Spread about two and a half tablespoons of grated cheese over one half of the tortillas surface.
Spread the filling over just half of the tortillas surface
Step5
Top the cheese with about two tablespoons of corn.
Step6
Now flip the uncovered half of the tortilla over the covered half with the filling being sandwiched in between them
Step7
Toast on both sides till crispy and browned.
Step8
Use a spatula or cooking tongs to flip the tortilla to the other side.

Tips & Warnings

  • To Serve: Cut in half to form two pie slice shaped pieces. Serve with a dip of your choice.
  • Makes: About 24 Quesadillas
  • Serves: 8-10
