Today's pork is lean, healthy, and really easy to cook for a quick weeknight meal. You can even cook a frozen pork roast, if you have a little more time. Choose a larger roast, roast it on the weekend, and enjoy pork roast leftovers throughout the week.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Whole pork roast
  • Baking sheet
  • Salt
  • Pepper
  • Cajun seasoning
  • Oven
  • Meat thermometer
  • Water, broth, or wine (for crock pot recipe)
  • OR
  • Crock Pot
  1. Step 1

Preheat the oven to 250 degrees.

  2. Step 2

Place the frozen roast in the oven on a baking sheet.

  3. Step 3

Roast for about an hour at 250 degrees. Remove from the oven and turn the oven up to 350 degrees.

  4. Step 4

Season the pork roast with salt, pepper, and your favorite seasoning. Cajun seasoning gives the roast a bit of a kick, but you can use any blend.

  5. Step 5

Place the roast back in the 350-degree oven and roast for another 1/2 to 3 hours, depending on the size of the roast. The internal temperature of the meat should be 160 degrees before you remove it from the oven. Check this with a meat thermometer.

  6. Step 6

Remove from the oven, allow to rest for 10 minutes or so, and serve.

  7. Step 7

Alternatively, put the frozen pork roast in a crock pot. Add seasonings, a half cup of water, broth, or wine, and set on low. Allow to cook at least 8 hours. Serve.

on 1/15/2009 I've also cooked a frozen pork roast on top of the stove, by searing all sides in olive oil, salt, pepper and crushed garlic. Then I fill the pot half way with water bring to a boil then cover and simmer for four hours.
