Although cereal or scrambled eggs can be satisfying breakfast foods, sometimes you just want something sweet to go with your morning coffee. Muffins are a nice, homemade treat, and oatmeal makes for a heartier, more filling muffin. You may even enjoy these moist muffins as a snack or a dessert. Give them to friends and family, bring them to a bake sale or keep them all for yourself. Does this Spark an idea?

Things You'll Need

  • 1 cup all-purpose flour
  • 1 cup packed brown sugar
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1/2 cup vegetable oil
  • 2 eggs, lightly beaten
  • 1 cup quick-cooking oats
  • 1 tsp. vanilla extract
  • 12 muffin cups, greased

Instructions

      Combine flour, brown sugar, baking powder, baking soda and salt in a large bowl.

      Combine oil, eggs, oatmeal and vanilla in a separate bowl. Add to the bowl of dry ingredients and stir until moist.

      Spoon mixture into greased muffin cups placed in the muffin tin.

      Bake at 350 degrees Fahrenheit for about 20 minutes. A toothpick inserted into the middle of a muffin which comes out clean indicates the muffins are done.

Tips & Warnings

  • If desired, you may also add 1 cup of raisins, semi-sweet chocolate chips or chopped pecans to the muffin mixture.
