Instructions

  1. Making Excellent Waffles

    • 1

Preheat the waffle iron. Refer to the manufacturers instructions for correct temperature settings.

    • 2

Mix together the flour, baking powder, salt and sugar. Whisk lightly to incorporate the ingredients.

    • 3

Separate the eggs; place the yokes in one bowl and the whites in another.

    • 4

Melt the butter and add to the egg yolks. Whisk until they are light and fluffy. Measure and add the milk, stirring until blended.

    • 5

Pour the egg-yolk mixture into the dry ingredients. Gently stir until all of the lumps disappear.

    • 6

Whisk the egg whites until they are stiff, but not dry.

    • 7

Fold the egg whites into the batter with a rubber spatula. Do not over mix.

    • 8

Spray the waffle iron with cooking spray. Pour 1/2 to 1 cup of batter onto the center of the waffle iron; this amount may vary according to the size of the iron. Close the lid and let the batter cook until the waffle is golden brown. Remove the waffle.

    • 9

Serve immediately with butter and syrup. Add fruit, cream, or berries for additional flavor.

Tips & Warnings

  • Leftover waffle batter will keep in an airtight container in the refrigerator for up to two days.

  • Measure the batter carefully. Overloading the waffle iron will cause the excess batter to drip down the sides and make a mess.
