Pull the little legs off the shrimp. This will allow you to pull off the shell. Make sure all shelling is off.

      • 2

Devein: Along the "spine" of the shrimp you'll see there is some black buildup. You'll need to remove this with a pairing knife. This is called "deveining" the shrimp but you are actually getting rid of its waste.

      • 3

Rinse quickly and set aside in a paper towel-lined colander.

      • 4

Put butter in saute pan. Add fresh, minced garlic. Add shrimp. Cook for two minutes on medium heat.

      • 5

Add diced tomatoes and basil. Cook for five more minutes until the shrimp is pink.

      • 6

Top off with Parmigiana-Reggiano, salt and pepper to taste.

    Tips & Warnings

    • Do not soak shrimp or run them under water. Once you devein then, rinse quickly and pat dry with a paper towel.

    • Choose high quality shrimp. You'll be able to taste the difference!
