How to Prepare Fresh Shrimp
Fresh, jumbo shrimp are delicious when prepared properly. Buy fresh (not frozen) from the seafood counter at your local grocery. Then, get ready to deshell!

- Jumbo shrimp
- Colander
- Paper towels
- Garlic
- Butter
- Diced tomatoes
- Basil or other favorite fresh herb
- Parmesan cheese, such as Parmigiano-Reggiano
- Salt and pepper to taste

Pull the little legs off the shrimp. This will allow you to pull off the shell. Make sure all shelling is off.

Devein: Along the "spine" of the shrimp you'll see there is some black buildup. You'll need to remove this with a pairing knife. This is called "deveining" the shrimp but you are actually getting rid of its waste.

Rinse quickly and set aside in a paper towel-lined colander.

Put butter in saute pan. Add fresh, minced garlic. Add shrimp. Cook for two minutes on medium heat.

Add diced tomatoes and basil. Cook for five more minutes until the shrimp is pink.

Top off with Parmigiana-Reggiano, salt and pepper to taste.

Tips & Warnings
Do not soak shrimp or run them under water. Once you devein then, rinse quickly and pat dry with a paper towel.
Choose high quality shrimp. You'll be able to taste the difference!
