How to Make Homemade Lowfat Vanilla Ice Cream

Make your own delicious lowfat vanilla ice cream in your ice cream maker.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 3.5 cups sugar
  • 3/4 tsp salt
  • 6 eggs worth of Egg Beaters
  • 4 cups of evaporated skim milk
  • 1/2 cup flour
  • 7 cups of 1% milk
  • 2 cups of heavy cream
  • 3 Tbsp vanilla extract
  • an ice cream maker
  1. Step 1

    Combine flour, sugar and salt in saucepan.

  2. Step 2

    Slowly add the 1% milk.

  3. Step 3

    Cook on medium to medium-high heat, stirring constantly, for 15-20 min or until thickened.

  4. Step 4

    Add one cup of the hot mix to the beaten eggs, then add all of egg mixture back to the milk.

  5. Step 5

    Cook for one minute more.

  6. Step 6

    Refrigerate for 2 hours, then stir in the cream, evaporated skimmed milk, and the vanilla.

  7. Step 7

    Freeze in a 6 qt ice cream freezer according to the manufacturer's directions.

Tips & Warnings
  • This recipe may be split for smaller ice cream freezers.
