Instructions

Start with about 1 pound of pork ribs. Trim the ribs so they aren’t too fat. Getting just the right trim is an art--too much and you will lose much of the flavor in the pork ribs. Too little and your ribs may be greasy. This is pretty much a matter of trial-and-error and your own taste.

Place the ribs in a slow cooker with approximately one cup of chicken broth. Cover the pot, turn the cooker on low temperature and let the ribs stew for about three hours. You can stew your ribs on the stove in a covered pot, but you'll use much less energy with a slow cooker.

Prepare the vegetables and spices. (Hatch chiles are especially good with pork ribs.) Toss in the remainder of your super-special ingredients. Allow the ribs to cook on low temperature for an additional three or four hours. When they’re done, the meat will fall off the bones.
