Difficulty: Moderate
Instructions

Things You'll Need:

  • 2 cups of dried cherries
  • 4 cups of Cabernet
  • 1 cup mint stems
  • 1 cup of chopped mint leaves
  • 1/4 cup sugar
  • 3/4 cups water
  • 1/8 cup cornstarch
  1. Step 1

Place cherries, wine and mint stems in a large skillet and bring to a boil.

  2. Step 2

Cook mixture until reduced by 2/3 and remove the stems. Reducing sauce will take approximately 30 minutes. Use strainer with small slots to remove stems without sacrificing flavor.

  3. Step 3

Add chopped mint and sugar to skillet and whisk.

  4. Step 4

Mix together water and cornstarch and add to cherry sauce.

  5. Step 5

Cook the cherry sauce, stirring until it coats a wooden spoon or to desired thickness. The sauce should be somewhat thick, but ultimately it's at the discretion of the cook.

  6. Step 6

Spoon the sauce over your favorite meat and serve.

Tips & Warnings
  • Garnish plate with mint sprigs.
  • Add more water to decrease the taste of Cabernet.
  • Try this with steak or chicken.
  • Occasionally stir sauce to avoid sticking.
