Ready for that taste of summertime! Here's one way to get that taste anytime of year. This fruit "pizza" can be made in any shape or size pan, and features fresh fruit you can find in season at your local grocery store. Enjoy this great dessert! Does this Spark an idea?

Things You'll Need

  • Pizza Pan
  • Mixing Bowl
  • 2/3 cup Butter
  • 3/4 cup Sugar
  • 1 Egg
  • 4 tsp. Milk
  • 1 tsp. Vanilla
  • 2 cup Flour
  • 1/2 tsp. Cream Of Tartar
  • 2 8oz Packages Cream Cheese
  • 2 1/2 cups Sugar
  • 1 can Pineapple Rings in Juice
  • 1 can Mandarin Oranges
  • Sliced Strawberries
  • Grapes
  • Blueberries
  • Raspberries
  • Sliced Bananas
  • 4 oz. can of Pineapple Juice
  • 3 tsp. Sugar
  • 3 tbsp. Cornstarch

Instructions

      Preheat oven to 350.

      Cream together sugar and butter in a medium bowl. Add egg, milk, vanilla and beat until fluffy. Add flour and cream of tartar, mixing until just combined.

      Spread crust mixture evenly into bottom of jelly roll or pizza pan, sprayed with non-stick cooking oil. Press together and make sure there are no holes. Bake until crust begins to turn golden brown, about 15 minutes. Allow to cool.

      Mix together cream cheese and 2 1/2 cups sugar until smooth and creamy. Spread over cooled crust.

      Drain pineapple slices and reserve juice. Layer on fruit, starting with pineapple slices, and adding each fruit. Make sure most spaces are covered on the cream cheese layer before beginning to add extra layers of fruit.

      In small saucepan, combine reserved juice and extra pineapple juice, sugar and cornstarch. Cook, stirring constantly, until mixture begins to thicken. Allow to cool for several minutes. Mixture should continue to thicken. Spoon or pour over evenly over fruit, making sure all fruit is covered.

      Cover and refrigerate at least 2 hours before serving.

Tips & Warnings

  • Soak the bananas in lemon juice if you intend to use them since they turn black quickly.

  • Don't serve without first refrigerating your pizza.
