Things You’ll Need:
- 2 pcs whole chicken
- or 4 pcs whole cornish hen
- 20 cloves garlic
- 2 pcs ginger
- 2 bunches green onion
- 1/2 bunch of chives
- 1 bunch cilantro
- salt
- pepper
- soy sauce
- green pepper
- green thai chilly pepper (optional if you like spicy)
- sesame oil (optional)
- Corn starch or tapioca starch
- jasmine rice
- THIS RECIPE MAKE 8 SERVING MEAL
Step1
Boil chicken for 1 hour. Scoop out chicken fat that floating on the surface of chicken broth. add a little bit salt, pepper and sugar.
Step2
Roast garlic with a little bit oil. put 5 pieces of roasted garlic into chicken broth.
Step3
Remove chickens into another pot/pan. Add cold ice water to cool it down. Discard water and slice those chickens.
Step4
To make sauce, add the remaining of roasted garlic, ginger (peel and cut it in small pieces), chives, green onions, salt and pepper into food processor until it form a paste.
Step5
Add 1/2 of those sauce on the top of chicken pot. mix cold water with corn starch or tapioca starch add into the pot. Pour few cup of chicken broth. Boil for another half an hour. Add cilantro. Add a few drips of sesame oil if desire.
Step6
To make the rice. Wash rice, put it into frying pan, add 4 spoons of butter. Turn on stove with low heat. Add 1/4 of sauce and mix them well.
Move it into rice cooker add 2 cups of chicken broth. Cook it until tender.
Step7
Add the remaining sauce into chicken broth. Reheat for another 10 minutes then add cilantro.
Step8
To make spicy sauce, put green pepper or cubanelle pepper, green onions, thai green pepper, salt, cilantro into food processor mix it for 1 minute or until it's mixed well
Step9
Serving suggestion:
Mold cooked rice into small cup. Put it on the plate, put chicken next to it and garnish with cilantro. Serve chicken broth on the side.
