Ingredients:
2 cups all-purpose flour
1/4 teaspoon salt
1 Tablespoon granulated sugar
1 teaspoon baking powder
2 eggs, slightly beaten
1 to 1 1/4 cup milk
Vegetable oil
Powdered sugar -
Step 2
Put vegetable oil in skillet, enough to make 1 1/2 inch in skillet. Heat until very hot but not smoking.
Meanwhile, combine dry ingredients in a bowl. Pour eggs and milk in center of dry ingredients. Stir until smooth. If the batter seems quite thick, add a little more milk and stir again. -
Step 3
Drizzle 1/2 to 1 cup of batter into the hot oil. I pour the batter into the oil with a measuring cup, but you may use a funnel if desired. Cook until lightly brown and then gently turn over to cook the opposite side.
Remove from oil and drain on a paper towel. Dust with powdered sugar. Enjoy!
