Instructions

    • 1

Purchase your ripe quince. Wash the quince fruit, removing any fluff.

    • 2

Finely chop the ripe quinces with the chef's knife--peel, flesh, core and all. Put the chopped or grated pulp into the jar. You may grate instead of chopping the quince.

    • 3

Add the sugar and then pour in the vodka. Screw the lid on tightly. Shake the jar vigorously to help the sugar dissolve.

    • 4

Place the jar in a warm, dark place for at least 60 days. The first two weeks, shake the jar at least every other day. The rest of the time, shake the brewing quince vodka once a week.

    • 5

Strain the liquor into another jar using muslin cloth. Coffee filters work just ass well. Taste and add sugar if needed.

    • 6

Pour it into sterilized bottle or jar and cap it tightly. Store until you are ready to drink or gift it to a loved one. Quince vodka is at its very best a year after it is brewed and bottled. If you keep it this long, it will change color from a warm yellow to a deep amber as it ages.

    • 7

When you are ready to drink or give away your quince vodka, pour it into an empty bottle. Decorate or gift-wrap the bottle. Gift it to a loved one and make his day!
