Instructions

Things You'll Need:

  • Ingredients as listed
  • 9-inch springform pan
  • Additional baking pan
  • Water
  • Oven
  • Refrigerator
  1. Step 1

    Preheat the oven for 320 degrees.

  2. Step 2

    Crust ingredients:

    1 cup graham cracker crumbs
    3 Tablespoons granulated sugar
    3 Tablespoons margarine, melted

    Prepare crust. Combine ingredients and press into the bottom of 9-inch spring form pan. Bake at 325 for 10 minutes. Remove from oven and set aside to cool.

  3. Step 3

    Reduce oven heat to 225 degrees.

  4. Step 4

    Filling ingredients:

    4 8-ounce cream cheese bricks, softened
    1 cup granulated sugar
    3 Tablespoons all-purpose flour
    4 large eggs
    1 cup sour cream
    1/4 cup cold water
    1 Tablespoon instant coffee granules
    1/4 tsp. cinnamon

    In the bowl of an electric mixer, combine cream cheese, sugar and flour. Mix until blended. Add eggs, one at a time mixing well after each addition. Blend in sour cream.

    Bring water to a boil. Add coffee granules and cinnamon; stir until dissolved. Cool completely.

    Gradually add to cream cheese mixture and mix well. Pour over prepared crust.

  5. Step 5

    Place cheesecake in 225 degree oven. Place an additional pan filled with water on the rack below the cheesecake. The steam from the water will help prevent cracks in the cheesecake.

    Bake 2 hours and 15 minutes. Remove from oven and cool on wire rack. Refrigerate in pan overnight. Run a knife around the outside edge before removing from pan.
