How to make Chicken and Fruit Salad

Nothing starts a summer meal well like the wonderful taste of fresh fruit and a grand salad that has been well prepared. This recipe combines the both and takes the bland out with a superb dressing to top it off.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 2 tablespoons orange juice
  • 1 tablespoon olive oil
  • 2 teaspoons sugar
  • 1/4 cup soy sauce
  • ¼ cup sliced green onions
  • 1 tablespoon lemon juice
  • 1 minced clove garlic or flakes
  • 12 ounces chicken breast
  • 4 cups spinach leaves
  • 1 cup sliced fresh strawberries
  • 10 oz can mandarin oranges
  1. Step 1

    Reuse an old dressing bottle or a 20 oz soda bottle, cleaned well. Combine two tablespoons orange juice, the oil, and sugar; shake until well mixed. Chill dressing until serving time.

  2. Step 2

    To marinade, add the soy sauce to the green onions, 2 tablespoons orange juice, the lemon juice, and garlic. Place chicken in a plastic bag. Cover the chicken with the marinade and shake well. Place the bag in the refrigerator and chill 2 to 4 hours, turning chicken every half hour.

  3. Step 3

    Grill chicken on an uncovered grill over medium coals for 5 minutes. Brush with marinade from the bag. Then turn chicken and brush with marinade again. Grill 7 to 10 minutes more or until chicken is tender and no longer pink(juices should run clear).

  4. Step 4

    Allow to cool and slice chicken breast. Discard any remaining marinade. Cover 4 small serving dishes with spinach leaves. Arrange strawberries, oranges, and chicken breast slices on spinach-lined plates. Shake dressing; pour over salads.

Tips & Warnings
  • Never reuse marinade that has been used before on raw meat. Spoil time is one day or risk of cross contamination.
  • Never leave the grill unattended.
