If you are looking for a healthy brownie that is loaded with protein and flavor, then try this one out. I have gotten a lot of compliments and recipe requests whenever I serve it at healthy cooking classes. It is fast to make, and they freeze really well. You can transform this recipe into vegan friendly if you use egg replacer, such as chia and water or a store brand egg replacement product.

Things You’ll Need:

  • • ½ c. chocolate chips, or carob chips • 2 c. garbanzo beans, drained and rinsed • 4 eggs • 1 c. agave nectar • ½ tsp baking powder • 1-2 tbsp peanut butter (optional

Step1
These vegetarian and vegan are brownies can be easily adjusted to your taste preference. You can make them completely organic, add extra chocolate chips to increase the chocolate flavor, and play with the agave amount to make them sweeter or less sweet.

Heat oven to 350 degrees

Melt chocolate or carob chips slowly, being careful not to burn them during the melting process. You will want to use a double boiler for this process. Once the chocolate is more than half melted, remove from heat and stir until completely smooth.

In blender or food processor, combine garbanzo beans and eggs (use and egg replacer if you want to make these a vegan recipe). You also could use a hand blender or immersion blender in a pinch.
Step5
Add the natural sweetener, baking powder, and melted chocolate or carob, process until smooth and without any lumps.
Step6
Pour batter into a 9” or 8X8” non-stick pan.
Step7
Bake for 45 minutes

Tips & Warnings

  • Let them cool before cutting into squares or triangles. Sprinkle some extra carob or chocolate chips on top of the batter in the pan before baking for a pretty effect.
  • Make and extra pan and keep the extras in the freezer
  • Be careful not to overbake these.
