This recipe is for a delicious and easy to make lentil patty. You can use it like a veggie burger, or make mini ones as a vegetarian appetizer, or use it as a side dish or main dish. Does this Spark an idea?

Things You'll Need

  • 1 cup dry lentils, cooked in 2 cups water
  • 1 cup carrots, shredded or finely diced
  • 1 medium onion, finely chopped
  • 1 cup bell pepper or zucchini, finely diced
  • 1 cup celery, diced
  • 2 cups quick oats
  • 1/4 cup extra virgin olive oil
  • 3/4 cup tomato paste (1 6 oz. can)
  • 1 tablespoon Italian seasoning
  • 2 teaspoons to 1 tablespoon sea salt
  • 1/4 teaspoon black pepper

Instructions

      Simmer lentils, covered, until fully tender (20 to 25 minutes).

      Mix all ingredients together in a bowl.

      . Form into patties and place on an oiled cookie sheet, pressing each pattie firmly together.

      Bake at 350 degrees until golden brown for about 20 to 25 minutes on each side.

      They are delicious hot or cold, and they freeze really well. These have a lot of flavor and are very healthy, filled with protein, fiber and nutrients.

Tips & Warnings

  • Serve plain or on a whole wheat pita pocket or in a whole wheat bread sandwiches with lettuce, sliced tomato, and sliced cucumber. These are vegetarian and vegan, but they are so delicous that they won't notice that they're healthy.

  • Make some extras, they are delicious and will disappear quickly!
