Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Alfredo sauce
  • 1 Portabella mushroom cap chopped coarsely
  • 1/4 tsp. finely chopped garlic
  • 1 tsp. butter
  • 8 oz. linguine (dry)
  • 1/4 tsp. chopped parsley
  • Dash of salt
  • 1/4 tsp. olive oil
  1. Step 1

Bring 6 cups of water to a boil. Add salt and butter to water for seasoning.

  2. Step 2

Heat olive oil in large skillet on medium-high heat, toss in portabella cap. Cook about five minutes or until slightly crispy. When done, remove from heat.

  3. Step 3

Add linguine to water and allow to cook eight to 10 minutes, or until it reaches desired wellness.

  4. Step 4

Drain linguine and run under cold water for two minutes. This will prevent the linguine from overcooking.

  5. Step 5

Add Alfredo sauce, garlic, and chopped portabella in a large pot over medium heat. Allow sauce to warm up before adding pasta.

  6. Step 6

Add linguine and parsley and stir, to mix together. Let cook on low heat for about five minutes.

  7. Step 7

    Plate and serve.

Tips & Warnings
  • Add shrimp or chicken for a heartier dish.
  • Try different styles of mushrooms for varying flavor.
  • Rub portabella mushroom with dry towel or napkin rather than rinsing. It will retain more of the mushroom flavor.
  • Avoid high carbohydrates by purchasing whole wheat linguine.
