Things You'll Need:
- stand mixer
- 3 egg whites
- 1/2 t. cream of tartar
- 1 t. vanilla
- 1 c. sugar
- 1/3 c. water
- 2 T. corn syrup
-
Step 1
Combine the egg whites, vanilla and cream of tartar in a small mixing bowl and start beating on medium speed to desired consistency.
-
Step 2
While the egg whites are beating, combine the sugar, corn syrup and water in a small sauce pan. Boil until the mixture spins a thread.* As the mixture gets closer to getting done, you may want to increase the speed on the mixer so the egg whites get nice and fluffy.
*Lift the spoon out of the liquid and let it drain off. When it has cooked long enough, the end of it will drift away looking like a thread from a spider's web. -
Step 3
Continue to beat the egg white mixture on high speed while you slowly pour the boiled mixture into it.
-
Step 4
Spread over the top of a cooled cake.
