Lobster Fra Diavolo, when cooked to perfection, is savory, spicy (diavolo!) and delicious. This is a perfect main dish for a holiday or a romantic dinner for two.
2 lbs lobster, cleaned and split in halves lengthwise
3 cloves garlic, minced
2 tbl parsley, minced
8 tbl butter
2 tbl olive oil
1 cup tomato sauce
4 red chili peppers, minced
2 tsp oregano
Salt and pepper, to taste
2 tbl grated, fresh Parmigiano-Reggiano
4 tbl white wine
Lobster Fra Diavolo!
Step1
Preheat oven at 400 degrees F. After the oven is set, place the split lobsters lengthwise in the oven for 10 minutes.
Step2
Remove the lobster and break it into bite-size pieces. Set aside. Be sure not to break the large outer shells.
Step3
Lower the over to 300 degrees F.
Step4
In a large skillet on the stovetop, brown the garlic cloves and parsley in butter and olive oil. Add tomato sauce, chili peppers and oregano. Add salt and pepper to taste. Simmer for 5 minutes.
Step5
Remove skillet from heat. Add lobster, Parmigiano-Reggiano and wine to the skillet. Blend well and fill lobster shells with the mixture.
