How to Make Beef Fajitas

Fajitas are a great family meal, and a relatively healthy one too. Here's how to make them. Does this Spark an idea?

  • Beef
  • Lime juice
  • Tomatillos
  • Tomatoes
  • Salsa
  • Sour cream
  • Lettuce
  • Onions
  • Garlic
  • Chili peppers
  • Salt
  • Bell peppers

Instructions

      Mince several cloves of garlic.

      Cut the beef into strips.

    • 3

      Dice the tomatillos.

    • 4

      Put the beef, tomatillos, garlic and peppers in a shallow plastic container.

      Add enough lime juice to cover everything.

      Add salt if desired.

      Let it marinate in the freezer over night.

      Slice an onion thin.

      Cut the bell peppers into strips.

      Put a pan on the oven and turn the heat to medium or medium high.

      Cook the onions until they are carmelized.

      Add the peppers. Lightly sear them for a few minutes.

      Add the marinated beef .

      Cook everything until the beef is done all the way through.

      Cut up the tomatoes and lettuce. Put each in a bowl.

      Put the sour cream and salsa in bowls.

      Heat the tortillas. If you have a gas stove, you can simply put them, one at a time, on an open flame. Otherwise, the microwave will work well.

      Serve the tortillas between two small plates to keep them warm.
