How to Make a Beautiful 4th of July Gelatin Salad

The red, white and blue of this cool and refreshing fruity gelatin salad is perfect for any Fourth of July celebration!

Instructions

Things You'll Need:

  • 2 small pkg. raspberry or other red Jell-o, regular or sugar-free
  • 1 envelope plain gelatin
  • 1/2 c. sugar
  • 2 c. hot water
  • 1 1/2 c. cold water
  • 1 tsp. vanilla
  • 1 c. half & half
  • 1 -8 oz. package cream cheese
  • 1/2 c. nuts (optional)
  • 1 -15 1/2 oz. can sweetened blueberries
  • Coolwhip or whipped cream
  1. Step 1

    For the first layer, dissolve 1 package raspberry Jell-o in 1 cup hot water. Add 1 cup cold water. Pour into 7 x 10-inch glass pan. Refrigerate until set.

  2. Step 2

    For the middle layer, dissolve plain gelatin in 1/2 cup water. Heat cream and sugar together. DO NOT BOIL! Mix into gelatin water. Add vanilla, cream cheese, stirring until well blended. Stir in nuts if desired. Cool completely and pour over first layer. Refrigerate until set.

  3. Step 3

    Top layer: Dissolve remaining box of Jell-o in 1 cup hot water. Add blueberries with juice and blend. Pour over second layer. Refrigerate to set.

  4. Step 4

    To serve, cut into squares and if desired, top each serving with Cool Whip or whipped cream. Yum!

Tips & Warnings
  • Make the day before to have well chilled and ready to serve the day of your celebration!
