How to Make a Huevos Rancheros

Huevos Rancheros (ranch-style eggs) are a traditional Mexican countryside favorite. The spicy dish has become popular in the United States, particularly in Texas and the Southwest. Here's how to make your own.

Instructions

Things You'll Need:

  • Salsa, preferably homemade
  • Olive oil
  • Flour tortillas
  • Eggs
  • Cilantro
  • Sour cream
  • Guacamole
  • Chopped onion
  1. Step 1

    Heat the salsa. In a medium saucepan, heat about two inches of salsa (preferably homemade) gently, stirring occasionally.

  2. Step 2

    Cook the eggs. When the salsa is near boiling, gently add the eggs to the top of the salsa, being careful not to break the yolks. Cover and cook for about 7 to 10 minutes. Remove the saucepan from the heat.

  3. Step 3

    Fry the tortillas. Heat a medium skillet until it is very hot. Add a tablespoon of olive oil and fry each tortilla for several seconds per side. Set each aside.

  4. Step 4

    Assemble, garnish and serve. To assemble, place one egg with a generous amount of salsa atop each tortilla. Garnish with sour cream, guacamole, chopped onion and chopped, fresh cilantro. Serve immediately.
