Salmon is a wonderful fish that is packed with the heart healthy Omega-3 fatty oils. High in protein and low in other fats, it is a wonderful compliment to any salad or perfect served as a main course with steamed vegetables on the side. Here is how to prepare salmon for poaching so you can lock in all the wonderful flavors for your salmon recipe.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • Foil
  • Salmon
  • Salt
  • Pepper
  • Lemon
  • White onion
  • Fresh salsa

Step1
Place a large piece of foil on your counter top. Put your piece of salmon in the middle of the foil. (When you buy your salmon, make sure all of the skin has been removed.)
Step2
Sprinkle salt and pepper to taste on top of your salmon. (No need to season both sides with the salt and pepper, the poaching will meld all of the flavors nicely.)
Step3
Slice your lemon into very thin circular slices. They should be wafer thin. Place those on top of your salmon so that it is completely covered.
Step4
Cut your white onion and separate it into pieces. A little onion goes a long way with this recipe. So merely breaking apart one slice and spreading it amongst the fish will do the trick.
Step5
Add a few spoonfuls of fresh salsa on top of your salmon. For the sake of the recipe, don't use the giant bottle of salsa you bought while at the bulk store. Spend a couple of extra bucks and purchase salsa freshly made. You will find this in the refrigerated section of your grocery store. Look for a salsa with nice fresh tomatoes, as they will provide wonderful juices for the salmon while poaching.
Step6
Seal your foil packet so that it is airtight. If for some reason you miscalculated the size, use a second piece. You want to create a packet in which heat will cause the juices to steam, thus cooking, or poaching the salmon. You have now prepared your salmon for poaching.

Tips & Warnings

  • To get wonderful results with salmon, buy it the day you wish to cook it. You can prepare it any way you like, but if it's not fresh, then the recipe will leave a lot to be desired.
