How to Cook Stuffed Onions

Spicy stuffed onions are part of traditional Indian cuisine. The onions are coated with a mixture of pungent spices, and when they are completely cooked, they have a lovely reddish color. This Indian dish isn't difficult to make, because the secret is in the seasonings.

Things You'll Need:

  • 6 medium onions
  • 4 tbsp. vegetable oil
  • 1/2 tbsp. cumin seed
  • 1/2 tbsp. amchur mango powder
  • 1/2 tbsp. stuffing salt
  • 1/2 tbsp. red chili powder
  • 1/2 tbsp. marsala
  1. Step 1

    Place the onions on a cutting board and use a sharp knife to cut off each end. Peel the skin from the onions.

  2. Step 2

    Slice each onion, but be sure not to cut the onion in two.

  3. Step 3

    Heat half of the vegetable oil in a heavy non-stick frying pan or skillet over medium heat.

  4. Step 4

    Stir in the cumin seeds and stir them constantly until they turn golden brown.

  5. Step 5

    Add the amchur mango powder, stuffing salt, green chili powder and marasala and mix the ingredients thoroughly. Cook the mixture, stirring constantly to prevent the spices from burning. Continue to cook until the spices form a smooth red paste.

  6. Step 6

    Place the onions in frying pan with the spices, and add the remaining vegetable oil. Cook the onions in the spices, making sure the spice mixture covers the entire onion, including the cut area. Stirring constantly as you cook the mixture for for 3 to 4 minutes.

  7. Step 7

    Pour in about 1/2 cup of water and continue to cook the onions, simmering and stirring constantly, until the water is completely evaporated.
