This quick, simple recipe makes drop scones in Ireland and Scotch pancakes in Northern Ireland. It's the perfect first pancake recipe. The baking soda combines with the buttermilk in this recipe to act as the leavening agent. For this reason, it's important to get the batter on the griddle as soon as possible after mixing it.

Instructions

Things You'll Need:

  • Mixing bowl
  • Mixing spoon
  • 2 cups flour
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 1 tsp. sugar
  • One egg
  • 1 cup buttermilk
  • Griddle
  • Oil or non-stick cooking spray
  • Spatula
  1. Step 1

    Measure the ingredients out before starting so that the batter can be assembled quickly.

  2. Step 2

    Lightly grease or spray the griddle or a heavy frying pan and preheat it.

  3. Step 3

    Sift the flour, salt, baking soda and sugar into a large bowl. Use a wooden spoon to make a well in the dry ingredients. Crack the egg into the well.

    Break the yolk with a fork. Pour the buttermilk on top of the egg. Whisk quickly into a thick, lump-free batter.

    Drop large dollops of the batter onto the hot griddle or frying pan. Turn once when tiny bubbles appear. Fry until golden brown on both sides.

Tips & Warnings
  • If you don't have buttermilk on hand, you can substitute sour milk. Add a splash of vinegar to a cup of milk and let it curdle.
  • Spread the hot Scotch pancakes with melted butter and syrup, or sprinkle them with powdered sugar and serve with jam. Serve for breakfast or afternoon tea.
