Looking for a great and easy Mexican dish to make at home, or are you ready to party for Cinco de Mayo? Look no further!

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 3 cups chicken, cooked
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 can Rotel tomatoes and green chiles
  • 1/2 cup chicken broth
  • 2 tsp salt
  • 1 bag tortilla chips
  • 1 onion, chopped and sauteed
  • 3 cups shredded cheddar cheese

Step1
Combine the chicken broth, soups, Rotel, and salt in a large bowl.
Step2
In a 3 qt. casserole dish, place the tortilla chips, chicken, soup mixture, onions, and cheese in order.
Step3
Bake for 45 minutes at 350 F. Serve warm.
