Here is an amazingly easy to make adult ice cream dessert. Make it ahead, store it in the freezer and serve frozen. Creme de Mint ice cream casserole will make everyone who eats it smile and ask for more.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1/2 cup creme de mint liquor
  • 1 box ice cream sandwiches (the cheapest variety is perfect)
  • 1 container of cool whip
  • 1 jar hot fudge sauce
  • 9 x 13 inch glass casserole dish
  • plastic wrap
  • chopped nuts (optional)
  1. Step 1

Prepare all the ingredients. Thaw the cool whip so that it will spread easily. Unwrap the ice cream sandwiches. Measure out the liquor. You will have to work quickly to assemble the creme de mint ice cream casserole before the ice cream sandwiches begin to thaw.

  2. Step 2

Pour half of the liquor into the bottom of the casserole dish and use a spatula to spread it evenly over the whole dish. On top of the liquor fit the ice cream sandwiches in so that the casserole dish is completely covered. You may need to cut some of the ice cream sandwiches to fit into the gaps. Pour the rest of the liquor over the top of the ice cream sandwiches.

  3. Step 3

Spread the contents of one jar of hot fudge sauce on top of the ice cream sandwiches. Use the spatula to move the hot fudge sauce until there is a layer of fudge - it will probably be about 1/4 inch deep- on top of the ice cream. Now spread the whole container of softened cool whip on top of the casserole. Sprinkle the chopped nuts (optional) on top of the whole casserole.

  4. Step 4

Cover the creme de mint ice cream casserole tightly with plastic wrap and place it flat in the freezer for at least 2 hours.

  5. Step 5

Slice and use a flat server to lift pieces of the creme de mint ice cream casserole out of the dish just before serving it on a plate with a fork or spoon.

Tips & Warnings
  • You can substitue any kind of liquor for the creme de mint.
  • Leave out the liquor to make this dessert for children.
