Over-baking, among other problems, will cause large cracks in your cheesecake masterpiece. It's easy to over-bake a cheesecake because it will not look done when it is properly cooked. It should have a slightly wobbly (but still firm) center. Does this Spark an idea?

      Check that the cheesecake has a firm but wobbly center, not a soft or somewhat liquid center.

      Test the baked cheesecake with an instant-read thermometer; a reading of 160 to 165 F is ideal.

      Test the baked cheesecake with a knife; it's done if the knife comes out clean.

      Immediately remove cheesecake from oven (and water-bath, if applicable). Let it cool to room temperature, and then place it in the refrigerator to chill completely.
