How to Classy Meat Loaf

So you want to make a great supper but don’t want to spend all the time over that hot stove. This is a great one that can be baked while you are away and will be a real crowd pleaser. The taste of this meat recipe is to die for, almost as if you spent all morning slaving away to get the job done.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 1 cup of finely chopped onion
  • 1 chopped celery rib
  • 1 Tbsp minced garlic
  • 1 chopped carrot
  • 1/2 cup of finely chopped scallion
  • 2 Tbsp unsalted butter
  • 2 tsp salt
  • 1 1/2 tsp freshly ground pepper
  • 2 tsp Worscestershire sauce
  • 2/3 cup ketchup
  • 1 1/2 pounds of ground chuck
  • 3/4 pound of spicy ground pork sausage
  • 1 cup fresh bread crumbs
  • 2 large eggs
  • 1/3 cup minced fresh parsley leaves

Step1
Preheat oven to 350 degrees.
Step2
In a large cooking skillet cook the onion, garlic, celery, carrot, and scallion in butter, over moderate heat, stirring, for about 5 minutes until softened and brown.
Step3
Cover and stir occasionally until the carrots are tender, about 5 more minutes.
Step4
Stir in salt and pepper, Worcestershire sauce, and 1/3 a cup of ketchup.
Cook for 1 more minute to allow the sauce to cure around the other ingredients.
Step5
In a large mixing bowl, combine the meats, eggs, bread crumbs, vegetables, and parsley. Form into a loaf and put into a rectangle baking pan with 2 inch high sides. Cover loaf with remaining ketchup.
Step6
Bake meat loaf in oven for 1 hour. To make it less spicy trade the pork sausage for mild or even another meat of your liking.

Tips & Warnings

  • Cover the top of the pan with foil to make sure that it does not dry out.
  • Never leave the stove unattended.
