Vidalias were first grown near Vidalia, Georgia, where the soil's sulfur levels are very low, which creates sweet onions at their best. Named after the town, these vegetables have become a favorite among onion eaters. Add a green salad and a tall glass of herbal iced tea alongside this Vidalia onion pie for a light summer meal. Things You'll Need

  • 1 cup Ritz cracker crumbs
  • 1/2 stick butter, melted
  • 2 cups Vidalia onions, thinly sliced
  • 2 tbsp. butter
  • 2 eggs
  • 1/2 cup sour cream
  • 3/4 tsp. salt
  • Pepper
  • 1/4 cup grated sharp cheddar cheese

Instructions

      Preheat the oven to 350 degrees.

      Mix the cracker crumbs with the melted butter and then press the mixture into an 8-inch pie plate.

      In a small frying pan, saute the onions with 2 tbsp. butter until clear but not brown. Remove the pan from the stove and set aside. Do not drain the cooked onions.

      In a medium mixing bowl, beat the eggs with the sour cream, salt and pepper. Fold in the onions along with the juices from the pan and then spoon the mixture into the pie crust.

      Sprinkle the cheese and paprika over the onion mixture along with a few green chives for color, if desired.

      Bake the pie for 35 minutes. Test by inserting a clean knife. If the knife comes out clean, the the pie is done. Garnish with fresh parsley and serve.

Tips & Warnings

  • Add small bits of diced ham with the onions, if desired.
