If you love Mexican food, you will probably love or at least heard of jalapeno peppers and how good it is when it's pickled. Equally good but lesser known are onions when they are also pickled in this fashion. You can try these onions as side dishes next to any grilled meat, hamburgers, hotdogs, etc.

Instructions

Difficulty: Easy

Things You’ll Need:

  • Onions
  • Water
  • Can of Jalapeno peppers
  • Salt
  • Vinegar
Step1
Go to your local grocery store and buy a can of jalapeno peppers. Open the can and empty the contents including all the spicy juices into a gallon jar.
Step2
Slice up as many onions as necessary to fill the rest of the jar. You will probably need about 4-5 good sized onions, perhaps more depending on the actual size.
Step3
After you've filled the jar with sliced onions, fill with water until all the onions are covered in liquid.
Step4
Add a couple of tablespoonfuls of salt and vinegar. Then close the lid and shake the jar (you can invert it as well). Make sure all the juices and water are thoroughly mixed.
Step5
Reopen the lid and leave the lid on top but not closed. Leave this alone for couple of days UNREFRIGERATED.
Step6
After the two days have passed, you can start enjoying a little piece of heaven. The onions should now taste similarly like the jalapeno peppers but not as spicy. You can now also put the jar in the refrigerator, and it should last a very long time.
Step7
Next time, you can experiment a bit with the amount of jalapeno peppers versus water and salt and vinegar. In general, the more jalapeno peppers and juices, the more spicy the onions will be.
