I love salsa. It goes with just about any food, including chicken, beef, etc., and of course, chips. If you like to eat healthy, then this is also the right dish for you. But I've seen so many recipes that go way too far. The original salsas made in Mexico were very simple and elegantly made. They provide a clear and satisfying taste unlike the many others that include things like fruits, beans, etc. If you want a great tasting, healthy, and satisfying salsa recipe, you've come to the right place.
Get some relatively firm tomatoes. Try not to get ones that are too ripe. They'll produce too much acid and make the sauce too tart. You want salsa, not spaghetti sauce. Get tomatos that are somewhat orange-pink (not deep red). Dice about 4 tennis ball sized tomatos into 1/4 inch cubes and put them in a large bowl.

Dice up some onions. Contrary to popular belief, just about any onion will do. Unlike some people who think that red onions are the best, it doesn't make a hill a beans difference. Any kind of onion will provide the essential kick to this dish. Each onion cube should be about the same size as a tomato cube. Dice 1 tennis ball (or smaller) onion and put into the same bowl as the tomatos.

Grab a small handful of cilantro and chop them up into small pieces, stem and all. Be sure you've washed them as they tend to have a lot of dirt. I don't know about you but I'm not very fond of dirt (it wears your teeth out and has no nutritional value). Put the cilantro in the bowl as well.

Chop up either two large cloves of garlic or simply scoop up one heaping teaspoon full of ready-made chopped garlic into the bowl.

Add some lemon juice, about 2 teaspoons. This can come be a real lemon or from a juice carton. It doesn't make a whole lot of difference as the tomato and onions will largely overpower any flavors imparted by the lemon juice.

Add about a teaspoon full of salt and stir this mixture until you get some consistency. Conduct a taste test (try to leave out the onions for now if you can) and add more salt if necessary. You'll need to chill this salsa for an hour or two for the onions to absorb the tomatos juices.

After 1-2 hours, serve with chips or as a side dish to grilled meat or anything-else. Enjoy!
