Taquitos are a great for a main dish or an appetizer. This recipe calls for either beef or chicken but also work well with leftover meat from tacos or a roast! Serve them up with some chunky guacamole or some cool sour cream...muy bueno!

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • Skillet
  • Cooking oil
  • Corn tortillas
  • Cooked chicken or beef, shredded can be fresh or canned (Libby's canned roast beef w/gravy drained works excellent)
  • Taco sauce or salsa

Step1
Heat cooking oil in skillet over medium flame/temperature
Step2
Place meat into bowl and mix in taco sauce or salsa to taste, set aside
Step3
Place 3-4 tortillas in the microwave for 20-30 seconds to soften, flip/rotate if necessary
Step4
On a cutting board or flat surface, place shredded meat in 1/2 inch line down 1/3 edge on softened tortilla and roll tightly, place seam side down on plate until all taquitos are rolled
Step5
Place 3-4 taquitos into hot oil for approximately 5-7 minutes turning occasionally
Step6
Place cooked taquitos onto paper towel lined dish to drain grease and salt lightly - eat immediately or place plate in a 250 degree oven while cooking remaining taquitos
Step7
Enjoy with your favorite condiments
