How to Make Passover Pancakes
One of the joys of Passover is creating delicious foods with matzo. Passover pancakes, sometimes called “matzo brei,” can be made several ways. Here’s an easy one that’s delicious. Ingredients are given based on two pieces of matzo per person. For more guests, increase other ingredients proportionally.
Things You'll Need
- 2 pieces of matzo per person
- <br>1 egg per 4 pieces of matzo (add eggs later if needed for a wet enough batter)
- <br>Boiling water
- <br>1/4 tsp. cinnamon
- <br>Grated apple, sliced strawberries or other fruit (optional)
- <br>Raisins or diced dried fruit (optional)
- <br>Cottage or ricotta cheese (optional)
- <br>Honey, sugar, jam or syrup
- <br>Griddle pan
- <br>Butter or margarine

Break up the matzo into a large bowl with your fingers until it’s the size of olives.

Pour the boiling water over the matzo until it covers. Let sit for a few minutes until the matzo has absorbed the water and become soft.

Drain the excess water. Add the cinnamon and the egg(s). Stir well until you have a <br>soft batter. Add eggs as needed.

Heat griddle well and add butter or margarine. Use a slotted spoon to get one spoonful of batter. Slide batter onto a hot griddle. Smooth the edges and pat the pancake down flat.

Grill well on the first side, then flip and continue grilling until cooked through. Serve with honey, sugar or syrup or pass a bowl of cottage or ricotta cheese. Try fresh or dried fruit also.

Tips & Warnings
If you prefer savory pancakes, add a little salt and shredded veggies such as zucchini or carrots or shredded smoked salmon.
<br>If you use a non-stick pan, just use a little butter or margarine for the taste.
If you want to serve pancakes at the same time, put them on an oven-proof serving plate in a 140-degree oven. They will stay crispy if stored in one layer.
