Chili is a hearty dish that's best served when it's cold outside. This is an easy recipe to make a lighter, vegetarian chili to enjoy all year round. This recipe serves 10.

Instructions

Things You'll Need:

  • 7 tomatoes (any variety)
  • 2 cans black beans, drained
  • 2 cups whole corn, drained
  • 1 can tomato paste
  • 2 cans tomato sauce
  • 1 red jalapeño pepper
  • 1 green jalapeño pepper
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 1 tbsp. olive oil
  • 1/4 cup chili powder
  1. Step 1

    Heat olive oil in large pot over medium high heat.

  2. Step 2

    Add bell pepper and onion, cooking until softened.

  3. Step 3

    Add tomatoes, tomato sauce, tomato paste to pot and stir.

  4. Step 4

    Reduce heat and add corn, black beans, chili powder and jalapeños.

  5. Step 5

    Allow it to simmer at least 30 minutes. Simmering for an hour will enhance the flavor.

Tips & Warnings
  • Serve with oyster crackers!
  • Use different tomatoes for a better flavor.
  • Add more or less peppers to taste.
  • Remove seeds from jalapeños for a less spicy taste.
