Things You'll Need

  • One large onion
  • One green pepper chopped
  • One large package of pre-shredded coleslaw or one large head of cabbage and two large carrots shredded
  • 4 tbsp. chili powder
  • Can diced tomatoes
  • Two jalepeno peppers, cleaned and seeded then chopped fine

Instructions

      In large skillet, sautee onions and green peppers in about 2 tbsp. of olive oil until slightly limp. This should take about four minutes.

      Sauteed cabbage should still be crisp.

      Add shredded cabbage package (or shredded cabbage and carrots) to pan. Sautee briefly until cabbage is slightly limp but still crunchy. Do this for about 3 minutes. Remove from heat and place in a bowl.

      Use Ro-Tel tomatoes in can to eliminate chopping.

      In same skillet, place diced tomatoes and jalepeno peppers. Sautee briefly. Add 4 tbsp. of chili powder and salt to taste. Add 1/2 cup water. Stir, and allow to simmer briefly until the tomatoes are just cooked, but still firm (not mushy). Remove from heat and allow to cool.

      Add tomato mixture to slaw mixture, folding in gently. Serve slightly warm--although it's great cold too.

Tips & Warnings

  • Fry bacon and add to spicy coleslaw for an added smoky flavor.

  • Using pre-prepared items helps to make this dish fast.
