A new twist on the classic Shepherd's Pie, the Cowboy Pie offers a leaner alternative. Just as fun and just as tasty, the Cowboy Pie is a new dish everyone will love. This recipe serves four.

Instructions

Things You'll Need:

  • 1 lb. ground bison
  • 2 shallots
  • 4 red potatoes
  • 1 lb. mixed vegetables (fresh or frozen)
  • 1 tbsp. butter or margarine
  • 1 tsp. salt
  • 1 cup American cheese (optional)
  • 1 cup gravy or broth
  • 1 tbsp. olive oil
  • 9 x 13-inch baking dish
  • Fork
  • Spatula

    Prep Work

  1. Step 1

    Bring 3 cups of water to a boil, adding 1 teaspoon of salt.

  2. Step 2

    Peel and chop shallots.

  3. Step 3

    Peel and slice red potatoes.

  4. Step 4

    Heat skillet on medium-high heat, adding in olive oil.

  5. Step 5

    Preheat oven to 350 degrees.

  6. Cooking Cowboy Pie

  7. Step 1

    Brown meat and shallots in large skillet until completely brown. There will be no fat to drain.

  8. Step 2

    Add gravy or broth to meat and onions and set aside.

  9. Step 3

    Add potatoes to boiling water and cook until tender.

  10. Step 4

    Heat vegetables until tender on stove.

  11. Step 5

    Remove potatoes from heat and drain the water. Mash potatoes and add butter and milk. Whip with fork or whisk until smooth.

  12. Step 6

    Spread meat mixture on the bottom of 9 x 13-inch baking dish.

  13. Step 7

    Place vegetables on top of the meat mixture.

  14. Step 8

    Spread mashed potatoes on top of vegetables with a spatula. Smooth until completely covered.

  15. Step 9

    Sprinkle as much (or as little) cheese as desired on top of mashed potatoes.

  16. Step 10

    Place in heated oven and cook for 20 to 35 minutes.

Tips & Warnings
  • Add 2 tbsp. of sour cream to mashed potatoes for extra creamy potatoes.
  • Peel shallots under running water to minimize watery eyes.
  • Avoid overcooking as it will dry out the bison meat.
